Festive Baking: Spiced Banana Bread

Baking has always been a passion of mine. I love showing my daughter ways to bake up some yummy treats. A festive favourite in our house is a spiced banana bread. We often use the left over mix for my daughter to make little muffins with.

Baking is such a good way of introducing your child to the kitchen; learning that different types of foods put together can create something very yummy! And is there anything better than trying your own freshly baked cakes when they come out the oven?

Adding spices to your banana bread are a lovely way to give it a warm, festive feel. Cinnamon, ginger and nutmeg are perfect for this! The smell is incredible too.

As a vegan family, we love veganizing anything we possibly can! So, this recipe is dairy and egg free which is really good for anybody with little ones that have any allergies. This is also a great idea for family get togethers too – we love an opportunity to get our aprons on, make a mess in the kitchen together and show off our baking skills!

Without further ado, here’s our recipe to bake your very own spiced banana bread:

You will need:

  • 250g self raising flour
  • 1tsp baking powder
  • 1tsp bicarbonate of soda
  • 150g light brown sugar
  • 250ml soya milk
  • 100ml rapeseed oil
  • 3-4 over ripe bananas mashed
  • 2tsp vanilla extract
  • 50g dairy free chocolate chips
  • 1tsp cinnamon
  • 1tsp nutmeg
  • 1tsp ginger

Method:

  1. Mix all the dry ingredients together.
  2. Add the wet ingredients to the dry mixture.
  3. Bake in a preheated oven at 170 degrees for 30-40 mins.

This recipe is so versatile and you can add anything you like – we often like to drizzle some melted biscoff spread on top of our banana loaf once it has has cooled down. Peanut butter is also a great way to add some healthy protein into your naughty treats! I hope you really love this recipe and give it a go for those cosy winter days.
